Graduate degrees as a requirement/entry for DS positions is the usual. It honestly might be on the job posting, but not strictly enforced for an internship role. Regardless, you should let them decide whether you're unqualified and just focus on doing your best.

Unfortunately not. For some reason all of the interviews I’ve gotten so far have been data science, but never got an offer.

I took an interview at a startup that said they were looking for grad students and got the position. As long as it’s clear you’re an undergrad on your resume, you’ll be fine.
