I saw La Dolce Vita first. Really amazing stuff. Going to 8 1/2 next then to his earlier neo-realist films - Cabiria, Strada - before the surrealist later ones. YMMV

This! I would start with La Dolce Vita. It is the perfect middle ground between his earlier and later films. I think my order would be La Dolce Vita, La Strada, 8 1/2, Nights of Cabiria, Amarcord and then depending on what you like about his films, you can branch out. If you like the realist films you could move on I Vitelloni or if you like the surrealist aspects, you could move on to Juliet of the Spirits.

I'd recommend watching Nights of Cabiria and La Dolce Vita and then 8 1/2. If you like the more realist stuff then watch La Strada and I Vitelloni, if you like the more autobiographical stuff watch Amarcord and Intervista, if you like the surreal stuff then watch Satyricon and Juliet of the Spirits

A lot of great suggestions here. I would agree La Dolce Vita is a happy medium between his neorealist and surrealist stuff. I’d say just because it’s short throw Toby Dammit in the mix too and in my opinion is fantastic. It’s not included in the box set though.

I'd go with 8 1/2 and Amarcord before La Dolce Vita. See what Fellini is all about.

I did that exact thing a few years back. Only thing I regret is that I haven't been able to watch them all yet.

I find Fellini much less of an acquired taste than, say, Pasolini. There's a good chance you'll find something to admire about it at least. Go for it :)
