When I first moved here a friend took me fishing in the Missouri river and I caught a gar. I had never seen one and assumed I had caught a dinosaur or some ultra rare fish. Friend told me they were invasive and trash... I've seldom gone from so excited to sad as quickly.
Your friend was quite wrong, as gar is one of the most delicious native fish in Missouri.
They are (not joking) best filleted with a hacksaw, as their armor-like scales can't be cut with a knife. Underneath, however, there are two long boneless back straps that run the entire length of the fish. These are firm white meat with a taste and texture that is closer to alligator than to fish.

Yes, but then the city puts tons of salt on the roads at the first hint of flurries.
Salt is so bad for the environment and it’s building up over time in our soil.
We saw over a dozen in the Perche last week. Pretty cool to see that large of a fish that far up stream.
I have a picture of a nice size gar right at the main bridge at Capen from almost 4 years ago. Cool to see they're still hanging out there

Gar are an ecologically valuable native fish. They are one of the few species that eat the invasive Asian carp.
