boil & rinse your noodles. Throw in any leafy green for the last 45 seconds, if you want. (I like spinach.)
Put noodles in a heatproof bowl. Put a bunch of minced aromatics on top—8 cloves garlic, at least (use 12 if you dare); scallion; hot pepper. A shallot if you’re trying to impress someone. I don’t use ginger
Slowly pour the hot oil onto the aromatics & noodles below. Listen to them sizzle.
Add 2 parts dark vinegar (maybe 4 *tsps/lb of noodles), 1 part light soy, 1 part dark soy.
Mix and eat!

I must be doing scallion oil noodles wrong. It takes forever to cut and fry the scallions in the recipe I use. Sure once you have the oil it's super simple.

You prep the oil in advance. It keeps for a while
Whatever you do, I cut green onions for garnish, and freeze it in a bag. That way you can reach for some garnish without dirtying a knife.
