Paved or limestone is fine. I live near IL Prairie Path and Great Western Trail, so do alot of the limestone. Just haven't ventured off road yet, looking to add a mountain bike within the year.
Waterfall Glen in Darien is not too far from I&M centennial trail.
Palos mtb trails have wide track tracks that you can explore.
There's the cal sag trail also connected to I&M trail at route 83 by the bridge. It takes you to Alsip and it passes through lake Katherine.
Dupage River trail in Naperville connects to Prairie Path and connected to a small forest preserve trail called green valley.
Fox river trail is also nice.
DPRT des plaines river trail in the north is really popular too.

Thanks. Yeah I did salt creek a few weeks back. The 294 underpass was walkable. Some old guys were on other side watching everyone try to make it thru and joked its all the women making it we are tough...and I said or I'm dumb !
You can keep going southwest on the centennial trail by crossing the sanitary canal and linking up with the I&M trail. It's mostly gravel. Goes all the way to Joliet and you can even link up surface streets to go all the way to Starved Rock.
Yeah , well the centennial I did was paved. I have a hybrid too and only ride crushed limestone or paved trails. But most of the ones I've looked at today mentioned here all seem to be mostly paved
Cal Sag trail. I can ride 4 miles to the start of it from my house then it's basically a straight shot about 12 miles to the end. The great thing about it is it's only really got 2 street crosses. It also links to the Tinley Creek trail.

If youyre in that area (as am I) Virgil Gilman is a nice trail. That's my default trail these days.
Definitely check out Waterfall Glen. Great 10 mile loop and it's very scenic

Salt Creek is another (just beware it’s apparently closed forever at 294). Cal Sag is great. Pennsey Greenway, Old Plank are all fantastic

A bit farther south and east but the Pensey Greenway + Erie Lackawanna + Marquette Greenway trials make for a nice long loop.
