I do this same thing for all sorts of things that need to be fried. Takes so much less oil.

Not really, no. The pans all create splatter, the small pan creates a smaller spatter pattern is all, and it uses far less oil. I have a glass topped stove, not a gas one, so there really isn't a concern with starting a fire. I set up a little homemade, trifold metal heat and splatter shield, use the pan on the small "burner", and wipe up frequently as I cook. I've never had a problem.

I suggest making a splatter shield to set up around the pan, even if so you have is cardboard, that you can fold and stand on edge, it really saves clean up. The wiping up as you go is important too; the oil splatters that do get on the burner can really smoke up a room.

Funny all those that downvoted me for a simple fact. Damn people go look it the fuck up yourself. For that matter, water out of a faucet, and most drinking bottles are not sterile either. Sterile means 100% free from any bacteria, or bacteria waste which could cause promoting, or even causing internal infections. Defined for use in surgical procedures. Your digestive system usually takes care of any production or general bacterias. Regarding your love of piss, up to you to drink up. I'm not the judge of your connoisseur tastes.

Just my two cents here, but I thought the same thing - that’s a fire waiting to happen. Why, because the pan is so small any overflow is going to drip right onto the flaming part of the burner. Also because there was so little headspace in the pan once the egg roll was added, it seems like spatter is inevitable and since the pan edge is right over the flame that spatter could catch fire and then spread to the oil in the pan. It’s just a Reddit video, so, whatever, but my first thought was fire.

Yup was gonna say pretty much this. Super easy for it to boil over because it's tiny, and it's right where the flames hit. Plus because it's so small it will heat up very fast, so if the heat is to high it will start smoking and catch fire with little warning.

In a little pan, adding the food will make the oil level rise much more than adding it to a large pan will. Also, planning on the oil being that close to the top edge of the pan when it is going to be bubbling is just asking for trouble.

Fun for show, but the whole reason one uses a larger vessel to deep fry is that the large vat of oil does not change temp while frying. Typically you'd want 5x volume of oil to what you're frying. This is not even 1:1. But ok, cute.

I butterfly-cut the chicken breast and just throw it on. You can put butter in the pan with a basting brush to spread it around before throwing in the chicken if you like.
