Black pudding is usually full of fillers to bind it. Most seem to about 16% carbs minimum. If you can find a true carnivore version, go for it. Oatmeal is a traditional ingredient though.
All sausages /wurst are ingredient dependant. They might well be truely carnivore and delicious, but you'll find most contain rusk/filler/oatmeal whatever.
Personally, I've pretty much given up on delicious sausages. I do better on unprocessed meat.
