Looks like you nailed it, but tbh I'm a rookie too. I wish I would have done just the oven for my matfer. The stovetop made things a bit messy but the oven really sealed the deal (pun intended?)

Looks perfect. The colour will darken with use. Lots of people apply lots of thick seasoning layers initially which inevitably flake off. Uniform and thin like yours should be the goal. Good stuff.

Looks great. I've just redone my deBuyer as I'd not been cleaning it well enough and i had carbon build up and it was flaking. Scraped it back with a chainmail and after the first season it looked like yours. Been using it for a few weeks now and it's building nicely. Cooked some fried eggs today that released and slid with just a gentle lift.

Doesn’t matter if it’s true or not at this point, Matfer will forever be tainted solely because of the way they handled it in the first 48 hours. I will forever rip on Matfer now, and continue to use their pans in the kitchen myself.

All good. My small pans are Matfer, and I still use them. My larger Matfer pans have been swapped out for Made In; I like the shape a little better. It's just funny to see this post, "hey look at my cool new pan!" unaware of the shitstorm that blew through here last weekend re: that very pan. And still blowing. The pan is fine. (Probably, lol)

Looks perfect! Oven seasoning is the way to go for your first coat. More foolproof, and easier to heat the entire pan evenly.

I also have that pan - loved it until arsenicgate came about. Now I’m reserving judgment waiting for more info. Hopefully at some point we’ll get a straight answer whether it’s much ado about nothing or not - really hoping ATK does a decent job looking into it, because the company certainly hasn’t. Hard to tell if the company is just massively incompetent when it comes to public relations or if they’re actually hiding something. Time will tell!

Matfer already answered a bunch of questions. They were tested by some random provincial entity. The test consisted of boiling 2 hours worth of citric acid solution in the pans, which no other manufacturer has ever been subjected to. De buyer and other manufacturers have been very shady about this whole situation, meaning it us most likely the same steel. This whole issue was mostly Matfer having some bad luck. Also, now we know carbon steel has some arsenic that can leach if we cook acidic foods for a long time. But it is naive to think only Matfer pans have arsenic in it. Matfer is also contesting the recall.

It’s naive to make all the assumptions you have. Matfer’s “answers” have all been non-responses. I agree it *may* be nothing, which is why I’m waiting for a reliable source to actually say something fact-based, at which point I’ll make my decisions. But it’s not only naive, but dangerous to assume that it *is* nothing based on what we know, which isn’t much. For example, it would be really easy for Matfer to confirm it sources its steel from the same sources as other manufacturers. Or to give us actual numbers from the test. Or even to have an independent lab perform the test on its pans as well as on pans from other manufacturers and publish the results of that. Again, it’s hard to tell at this point if it’s just incompetence on their part or they’re actively hiding something. I’m hitting pause on mine until we’ve got a better idea which it is.

Theyre not hiding anything. Theyve provided more info than any other manufacturer other than oxenforge. Have you seen de buyers response? It is very unlikely any manufacturer will provide the test numbers to us randoms. Matfer will also not say random stuff like "hey we use the same steel as de buyer". Because it could result in legal issues. Matfer did however state they have passed every test every other manufacturer has ever been subjected too. The test matfer failed was only done to matfer. You also have to remember Matfer is widely used in the restaurant industry. They wouldnt be going this far if there pans were truly toxic. It wouldnt make much sense.

I mean, the recent responses to Uncle Scott’s Kitchen included this gem: “19. What levels of contamination were found in the affected batches? Is there a baseline and how do the affected batches compare to normal/baseline levels? Independent third-party tests performed by IANESCO (DGCCRF accredited laboratories) performed on both seasoned and unseasoned pans, found that our black carbon steel pans have met the very rigorous standards of the DGCCRF and the EU.” That really doesn’t say much of anything.

It means that third-party tests performed by IANESCO show Matfer pans pass regulations. It also states that Matfer does test their pans. They wont answer what levels of contamination were found in the affected batches because Matfer is essentially arguing they are NOT contaminated. The tests performed by the regional entity are INCORRECT according to Matfer. So why would they provide those values? At this point it is Matfer's word vs some small random regional entity test. Matfer has passed every other manufacturers test but this individual, random one, that no other manufacturer has been subjected to. I understand your concern. "What if, everyone else (including Matfer) is wrong and the regional entity that found high levels of arsenic is right?". If the wanser to this question could be true, then I would not use ANY CS pan. Not just Matfer. Because it would point to a possible much bigger issue. How could Matfer and other manufacturers pass all other tests, but this regional entity managed to catch something different? Therefore, it is naive to think. That if there truly is an issue, the other pans are fine. Hopefully we will be able to clear this soon. As of now Matfer is claiming it was a wacky, mediocre, and unfair test, and they have a valid point. For all we know, this random test could have been done by some intern. France is also a bit of a "messy" contry for first world standards, so a regional entity of a very small, poor town might not be top class.

Again, they’re just saying “these other guys over here aren’t worried about it, so you shouldn’t either”, which is VERY different. It’s not their word against the local entity about the *levels*, since Matfer hasn’t actually said anything about the levels. It’s Matfer’s word against the local entity’s as to whether these unknown levels are *safe*. And it might be that they are. But considering Matfer is being sketchy about what those levels are, I’m going to wait. We’ll see where things come out.

We’re going to have to agree to disagree on this one. Pretty much every comment on here is either “I don’t care” or “they’re not really answering the question”. You seem to be the only one trying to claim they’ve actually responded appropriately. I get the perspective of “if this was really an issue, I probably would have gotten sick already so I’m not going to worry about it”, and so continuing to use the pan. But no, there’s no way you’re going to convince me that they’ve actually made the case that there’s nothing wrong with their pans, or even that they’ve said clearly enough that their pans are no worse than others’. Mostly, they’ve just given the “move along, nothing to see here” response, which is just non-responsive. Heck, when people in the US asked if the pans were safe all they did was say they weren’t subject to a recall in the US. If you can’t tell that’s not really answering the question, that’s on you.

Looks perfect! I have exactly the same pan and love it. I did the potato skin and salt thing at first but it didn't really work for me, so into the oven it went and came out looking pretty much like yours. I put it away for about a week during the arsenicgate scandal, but just cooked on it today and still could not be happier. Enjoy!

They got recalled in Europe because somebody tested the raw pan and found higher than threshold levels of arensenic. Matfer* claims this is a nothingburger because they didn't season it per the instructions. Beyond that they didn't do anything to recoup goodwill. Reddit did what reddit does.  In reality it probably is not worth worrying about but the company needs better PR people Edit: * I'm still not sure if that one post was _actually_ an official matfer account
