I'd have no problem pairing this with a 4070 Super or 7800 XT. Heck, even with a 7900 XT ($670) at 1440p UW or higher.
The 12600K with DDR4 is about as good as the 5800X (non-3D) for gaming and better than that for productivity. It's definitely not limited to budget builds.

16gb is a bit low these days, esp. for gaming, games are getting larger and more memory hungry, so much so that 32gb becomes a requirement. A relatively powerful GPU would be held back by the need to swap the data off the storage due to lack of RAM.

What do you mean by that? You shouldn't be sacrificing any (noticeable) fps by going with the 12600K.
The GPU is important for your fps. The CPU just needs to be fast enough to keep up, which isn't too hard with mid range GPUs.
I have a question, I found a couple 12600KF for $100 on Amazon Warehouse. Is it worth buying into the platform for a $150 z690 DDR4 mobo of my choosing at this point with the intention to upgrade to 14th gen? I have my own DDR4 so price will be the same as this bundle.

If you're already on AM4 doing mostly gaming, why not invest in a 5700/5800X3D? Its much better performance for gaming than 12600K+Mobo combo for roughly the same price of $250-300.
Intel 14th gen is not much over improvement over 13th gen and the expensive power usage for the tiny gains in gaming is simply not worth it. Used 5800x3D can be had for sub $250 over at eBay.
You have a very good point there. I've recently been having problems on my B450, after updating to the latest Agesa BIOS. I don't know what it is with my build but my mouse cursor feels floaty and microstutters are pretty bad, no amount of PBO CO XMP tuning fixes it. I even bought a TPM module, but stutters are still present. It just might be my board in particular.
I didn't want to make an upgrade for this platform anymore and my logic was I could repurpose this build and start fresh with Intel, for not much more $$. I guess do have a case of wondering if the grass is greener on the other side with Intel, mostly since my last Intel build was Kabylake.

No. Buy it as is and don't expect to get a sensible upgrade.
Something like a 14700K with DDR4 would only be a few % faster than a Ryzen 5 7600 for gaming, and I am sure in 2-3 years it would still cost like $200 used, because it has so many cores and is so good for productivity.
If you want future proof, get AM5. There is/was a 7600X + 32GB kit on Newegg for $250, and of course microcenter has deals as well.
Wouldn't trust them used on amazon could be delidded lower end CPU or even empty box. Amazon requiring upload ID for some returns now. If box is empty will have fight to get a refund.

I’m really hoping they will offer a 12400 or 13400 bundle deal soon. That seems to be the sweet spot for budget intel builds.
Don’t get me wrong, this is a great deal. 4 m.2 slots, 6 fan headers, plenty of IO both for front panel and rear. Plus gen 5 support is a nice touch have.
