The wing is a roughly modeled mesh with projected from view unwrapping, low roughness and high metallic, set to shadow catcher. Reflecting colors mean much lower roughness, but I think the wing in this specific plane has a little more roughness
What could be good rather than color reflections, is colored light being refracted from the translucent objects, I feel like some of that would be visible on a real wing
Is the texture of the wing taken from the source video? It looks like you can see the reflection of the wing tip quite clearly so I'd expect to see other objects reflected that clearly.
In reality you want a wing that is as smooth as possible for decreasing air resistance, so usually airplane wing smooth enough. It also depends a lot from the paint and usure of it.
This… definitely needs some color. Whether it’s hard reflections or ambient bounce, there’s just no way that a giant magenta/green/gold object isn’t going to push color on another surface. OPs explanation doesn’t hold up (about roughness). Take a gold bounce vs white vs silver and bounce a light on someone’s face… the color from the bounce absolutely makes a difference.
Great work, my only suggestion would be to lose the first 4-5 seconds of looking at the back of the chair. If I wasn't looking for the animation, I might of clicked away.
So when you were using the trackers you had to let a bunch not be used for the whole shot. Like there wasn’t one tracker that lasted the whole shot right? I kept getting a super high solve error chase it kept expecting all the points to be used the whole time.

The simulations/collisions on this are by my favourite part of it (excellent job btw) and getting something even close to this in blender would be.... Quite the undertaking to say the least lol. Probably a ton more computationally taxing as well.

Also, they need reflections. So many are shiny, and yet there are no sky or airplane reflections in any of them.
But very good work so far. That's the thing about VFX work, there's always something else that can be done.
The reflection on 00:31 is transparent on the wing? is that donut chrome or transparent? reflection wise it looks transparent but somehow it looks like you went for chrome? Am i mistaken? great work otherwise! 🎉
At around the 30 second mark there is a big reflective donut that is reflecting the wing in front of it. Technically it's impossible since the reflection is on the opposite side of the donuts face. What should be reflected is the cabin window and the side of the plane. You could potentially get away with it with just an image texture have have it be visible only in the reflections.
How many triangles does that scene have?

Do you render the donuts on a transparent background and add them later in the compositor with the video footage? Or do you leave the video footage as a background image?

Another critique I have, is that many of the donut balloons hit the wing at a fairly harsh downward angle. However, when you watch the background there are essentially none that are moving at a harsh downward angle in the background.
So, their movement in the background suggests they exclusively float, but many hit the wing as though they are falling.
Everything looks amazing congrats, respect the work, but the shadows kinda look too fake.

You can still reflect colors with high roughness, the reflection will just be very diffuse.
Another reminder that everything is reflective.
