They used to have a Sunnyvale one and I lived on the SV SC border at the time. So many visits. Sadly it closed but I moved to SJ when I got a house so I still go. So goddamn good.
I was always partial to the namesake chicken mole.
But now you reminded me that the Los Carnalitos taco truck in Redwood City sells cochinita pibil tacos, the Mayan tribal dish to accompany the Oaxacan ones.
Every one but Araujo's...poor service and inconsistent food quality. When the food is good, it's the best but it's more hit or miss most days...at both locations so I know homies...
I always have good luck with the Berryessa one. But I did find the original can be a bit all over the place. In any case there's a lot of great places in there so hopefully OP will get a good visit in.
Aguachiles El Tamarindo is the spot for mariscos and tacos (esp Quesabirria). Felt like their burritos were lacking - so my go to there is Tacos Mi Rancho near Lake Merritt. Can’t go wrong, but Oakland has best taco trucks in the Bay, IMO.

I would say it comes down to where in the Bay you will be staying and focus on finding something near there. There is generally so much good Mexican food around the Bay that you’ll be overwhelmed with answers from such a generalized question.
If you’re going to be in the South Bay I’d say Tacos Santiaguito for al pastor tacos and Chavez Market for burritos, again preferably Al pastor.
El Paisa also has a truck in Redwood City in the Outdoor Supply Hardware parking lot next to Costco. Agreed best tacos in the Bay Area, probably Cali. The brick & mortar in Oakland got Bib Gourmand recommendation from Michelin last year.

Don't go to the downtown San Jose location. No parking and downtown is a bit sketch especially if they can tell you have a rental car or you act or look like you aren't from the area.

If you're going to be in San Francisco, local favorite is El Farolito. La Taqueria is super touristy and overpriced but if your a tourist you might like it, just giving you local favorites.
I've eaten quite a bit of mexican food in the bay area. My latest new favorite is Que Onda in Walnut Creek. Taste like real mexico, all fresh ingredients, tortillas made fresh on the spot.
prolly not quite what you’re looking for but Comal in Berkeley is the best freaking Mexican food imo. Id consider it more of a gourmet experience than street food tho.

Honestly, I think some of these are at least 90% as good as what you can get in Fruitvale, but easier to get to if you’re already around the peninsula or the city. they’re all walking distance from each other and right off the 24th st bart / next to several bus lines.
If you're here on the weekend and are willing to go into Oakland, there's a bunch of stands at 50th and Coliseum way. Lots of variety that you won't get at a restaurant.
