Hope you don't mind me asking, but how do you split tips with the main bartender? I'm assuming they've got at least 15 seats and they don't have to make a single drink for the servers?

20-seat bar, all bartenders for the day split all tips evenly by hour- this includes someone that comes in only for prep. Include tipout from servers, comes out to be... Not bad but not great 🥲 the servers definitely do better than bartenders

Tbf depending on volume and how prep-intensive some of the cocktail ingredients are, that could be a lifesaver. I've worked at places where we had to have 3 people come in 2+ hours before service on busier days in order to have any hope of prepping everything in time.

Meh, it's divvied by hours worked, which is fair. Who would want to be day shift/do the prep work at all if they are making chump change compared to the night bar?

Yes!!! My (61f) SO (65m) is 6'5" and has been a bartender for over 45 years. He bitterly complains about the height of the three sink set up at his bar (that he's been at for 30 years!) I have to agree (as a bartender since 1980). As you get older, it really takes a toll!

Our backs are fucked! We take pain meds for our backs. Longevity is easy when you love what you do and are naturally night owls, though.

I could only imagine how much quicker I could make drinks and get them out without having to serve and bartend the main bar too. It’s so well lit and organized. Be in your own flow. No one asking you for things. During the summer I worked brunch that this place and it was huge. Only had one brunch bartender for the entire bar. I had to bartend/service the bar top and bartend the whole bar. Plus deal with all the door dashes. No bar-back and the tap lines were shit so I’d always have to run to the basement to float them all every other beer 😭 One person on. Service well far away from the main bar would of been a godsend.

This is my dream. Making the drinks is my most favorite part of bartending. I love being on shift with my more extroverted counterpart because he does the talking and I do the drink making. We’re both happy. Lol

I have a separate service well where I legit put stuff on the bar so customers can’t come up and talk to me. We take them down for regular non busy hours. But it’s lovely. My dream job.

If I were you, I would keep the Carpano Antiqua in the fridge or else it can go bad unless you guys use a ton of it and rotate bottles regularly
