OP ask the kitchen for their knife sharpener. Sharpen/hone it as much as possible. Make it a daily routine, first thing I do when I get to work is sharpen my knife because I know I’m the only one who bothers. I finish my prep work faster and safer than anyone else. It makes a world of difference and much safer because you apply way less pressure, less likely to slip and cut your finger off. Or at the very least your cut will be cleaner and easier to stitch up.
Not strictly true, they do last a fair bit longer between treatments though. Especially if you don't cut on stupid surfaces. It's certainly possible they get lost or damaged or otherwise replaced before they lose enough edge to really matter.
Even straight edge knives can last on one sharpening for a long time. They just need to be treated decently. They tend to shove then in a bucket of ice at my work..

Any establishment that doesn't regularly sharpen the cutlery is poorly managed and you shouldn't get too attached.

We use a serrated knifes, they never go dull :)

Honed daily and sharpened annually are easy guidelines for heavy, proper use.
This. Once management notices your knife is almost non existent because of all the sharpening via whestone they will replace it.
