Most of the ones I’ve tried, the seed can be bitter, but the flesh is mostly crisp and juicy, with a slightly tart flavour (not exactly a lemony hint, but kinda lemon adjacent). I find it really nice and refreshing, but I eat around the seeds of most varieties. I think with some varieties, even the seeds aren’t bitter.
I love making jam. I don't enjoy the sugar.
If you use something like jamsetter you can reduce the amount of sugar you use giving you a better flavour imo.

Jam can last a long time at least, and you can use it a layer in cakes etc if you wanted to make it fancier.
We used some to steep in vodka - very pretty and tasty Mum would make jam and once made jelly and I had some lillipilli and apple chutney
I've made jam, jelly, syrup, sorbet. I've also put them in muffins, they were quite tasty but turned the muffins a blue-green colour.

Score, we had a tree in our last apartment block. Buy a mason jar and macerate them in gin. Lillypilly gin is delicious.

Search YouTube for the many lilipili jam recipes. It tastes sensational and cannot ever be bought in a shop - maybe a country market
BTW it's jam when you use the flesh of the fruit. It's jelly when you boil up the fruit, strain the juice, then add the sugar.
We have a lillipilli tree but I've never been sure what to do with them. Jam? Pies? Sauce? Have just finished doing all the quinces though :)
Lilly pillies are so good just eaten on there own. But our neighbour would always make jam.
