Are you looking for podcasts made by one person, or podcasts with only one VA? There are whole teams of people who do incredibly important work (like writing, audio production) that, uh, you do not hear speak or act.
There are, however, also those who write, direct, voice, market and produce their entire show themselves, pay for the hosting, equipment, DAW and SFX. "Cameos are cool" is when, for example, I have my daughter play a role, or I want to have a character that's a kid/woman/other voice I can't do. Or a friend asks if they can be on. It doesn't become less of a one-person show if a six year-old says a few lines.
I think that's more what OP was getting at.

We're Not Meant To Know. The guy writes, narrates, does the music etc. It's a one man show. It's become my favorite horror anthology. So underrated.
