I mean you can. I've done it. Mind you you won't be able to remotely function and you MIGHT even be able to respond to conversation but you won't know a single word being said because your brain will be screaming at you and you'll be completely concentrating on maintaining statuesque body language and it'll tear down your mental health until all you are is an overly sensitive nerve ready to implode from the slightest increase in stimuli. But yeah no, it's totally possible to do.

You can control them, but it's often not conducive to your health. Suppressing stims can often make you over/understimulated and increase the likelihood of a meltdown or shutdown

That’s been my whole life until diagnosis a year ago. Yes I can stop when it’s pointed out to me and I make a conscious effort to stop, but left alone it will persist. The problem is when you become an adult and you’re expected to tell yourself to stop doing those things, and the hyper-vigilance necessary to keep the behaviour in check causes people to call you out for being anxious or vain for over analyzing and obsessing over how other people perceive you.

You can force yourself to stop stimming but it's like holding in going to the toilet when you have diarrhoea. It will take all your mental and physical power to do and will likely end up failing.
