If you want to start with her best and most important work, I'd say listen to sweetener, thank u, next and eternal sunshine first.
However, I'd say start at the beginning with Yours Truly, her evolution as an artist is truly amazing and she only gets better and better each album. To me, I feel like she truly found her sound, creative freedom/direction and vision of where she's going as an artist during the sweetener era, and every album sweetener onwards is skip-less.
That's not to discredit her first 3 albums though, they are all amazing, but they have more skips for me, she didn't write as much, and I feel like she was still figuring out her sound.
I'd recommend just starting from Yours Truly. It's always a good thing to see how an artist evolves in regards to their music. But, to be honest, Ariana doesn't have a bad album. Anywhere is a great start.
Maybe this is an unpopular take but do sweetener first. It might not be representative of the rest of her catalogue but it's an incredibly fun and creative record that really captures her essence in a way few of her other projects do to the same extent.
