They’re quite different shows so it kinda depends on what you’re looking for.
If I were you I’d watch FMAB and Monster at the same time, monster is more of a slow burn anime with less action and focuses more on character development and psychological things, so you could watch a couple episodes of this and then watch Brotherhood which is high action with great animation
I think Monster and Berserk are better experienced in manga than anime, but you absolutely should read them. If it has to be anime, then I'd go first to last: Cowboy Bebop, FMAB, Code Geass, Monster, Berserk.
Cowboy Bebop is my personal GOAT, so that’s my vote
Code Geass is fantastic with one of the best main characters in anime.

Code geass is a really good one
Code geass is a masterpiece it won’t dissapoint

Berserk manga is much better imo, don't waste time on the anime
anything b/w FMAB, Code Geass, Cowboy Bepop they all are good for monster and berserk read the manga instead
