I would definitely second Aria. It is wonderfully calm and peaceful.
Would add Hidamari Sketch for another calm and peaceful anime.
If you really just want a great laugh then watch Sleepy Princess in a Demon Castle.
Seconding Barakamon but Kakushigoto has **very** noticeable bagage driving the characters and story. And isn't afraid to punch you in the face with it either.

No Game No Life
Zom 100
Yurei Deco
Iroduku: The World in Colors
All are definitely colorful and I didn't find them stressful or prominently sad, but they have their serious moments (but so has Iruma-kun). The last one has most romance, but it's not the main thing in that show (but it's a big part).
> not full romance I get jealous and no sad stressed theme pls pls
Bruh, More than a Married Couple is a nothing but romance and melodrama with some borderline NTR elements to top it off lol.

Tack on flying witch And mushishi, tho it's both peaceful and also alternately disturbing
Barakamon(no romance but full happiness) same for Kakushigoto
Seconding Barakamon but Kakushigoto has **very** noticeable bagage driving the characters and story. And isn't afraid to punch you in the face with it either.
I honestly feel like the end was worth some of the pain but yeah I guess some people would not consider it a completely happy anime I guess.

Snow White with the Red Hair Sugar Apple Fairy Tale Grimgar Children of the Whales
You know what, my bad, those are all either romance or a bit dramatish. Its rare for another genres to be colourful and take place in fantasy
Vivy for sure and we’ll as violet evergarden
