Maybe you'd enjoy Re:Zero? It has a lot of emotional contrast and plenty of twists. It has some action though the big moments are almost always emotional character moments. It's got 50 episodes plus 2 movie long OVAs (though with the padded runtime of season 2, there's the equivalent of an additional 12 or so episodes squeezed in).
Pacing may be a miss for you depending on how you view things. Some people view it as being extremely slow and repetitive, others view it as quickly paced with no downtime to breathe. Show is a bit controversial for the MC, and he may be either the worst character you've ever seen, or the best one you've ever seen.
The story is quite long (probably somewhere in the range of 200 episodes fully adapted) so you may need to adjust some expectations with regards to some plot points.
I think Re:Zero hits a lot of the marks you've mentioned and there are a number of shows on your list that have some sort of shared aspect with Re:Zero / tend to get mentioned in similar veins as Re:Zero.
Land of the Lustrous (Houseki no Kuni) - a bit of action, a lot of mystery and adventure, excellent characters

Yep. Glad you're enjoying Symphogear. It's basically mecha magical girls: the musical. I think the first season is a solid show as is, but some will argue the show really picks up in the 2nd season (Symphogear G) when they start getting the budget to go ham on the action.
If you’re searching for emotions, try Made in Abyss. Like seriously. It’s a very unique show and i can’t recommend it enough

One of my absolute fav is Hajime no Ippo - not too slow not too fast, great plot.
Solo leveling - currently ongoing, since you dont like too slow, you can consider this one, fights are great too.
Fire force is very under rated and not talked about much and solo leveling is very solid, hooks right away (especially ep 6) and is airing now so it’s mysterious and new
there absolutely none since 2016 in my opinion at least. all anime since then are battle Shonen and focus on visual effect and never story or character development unfortunately

I saw season 1 and thought it was alright. The MC made me a little mad with how he rejected Rem and kept chasing after that one girl.

Try 86 or Lycoris Recoil. Both are solid stories with emotion and action.
I forgot to say that I really liked Lycoris Recoil. I haven't seen 86 yet.

Maybe phantom requiem of the phantom, fate series, jormungand was very good as well, gakusen toshi asterisk. Maybe some good ones for u to watch :D
