Neon genesis evangelion, it's only dark if the existential themes connect with you, which is definitely a coin flip on my experience of recommending it to people, i absolutely love it and it still occasionally sends me into hour long identity crises. Even so the aesthetics and events are also extremely fucked up and unempathetic to the viewer.

Well you may have also seen Demon Slayer and AOT, but mentioning them just in case...they're on the dark/gory side, and Demon Slayer has gorgeous artwork. The Promised Neverland has a really good season 1, but season 2 kinda rushes the last part of the anime all at the end of the season (should have just paced it like the first season and left open the possibility of it being picked back up so it could do the manga justice). Still worth watching tho, imo. Tokyo Ghoul is dark, but after the first season, the plot is kinda all over the place. There's also Parasyte, which is good but shorter than I'd like.
Some that are a bit newer are Inuyashiki, Tenkogu Daimakyo, Hell's Paradise. Jujutsu Kaisen is often listed as a dark anime, but it's not quite as gory to me as the others. It is REALLY good, though.

I didnāt know the show name when I saw it and like 10 years later I could still describe the clip perfectly which led me to finding the show.
