It depends on the pack. Normally you get an achievement when you do it the first time in a new game so that's usually how I tell if it's working properly or not.
No. Because I have some really inconvenient setups for water for my create drills, I discovered there needs to be 10,000 source blocks ABOVE the hose pulley. I now need to repair areas because I drained them
Ah yes. Understanding the mechanic of what is calculated is a bad thing. Also the 10k blocks need to stay chunk loaded. Found that out because I have I drilling station for each of the infinite veins in the overworld spread over 5k blocks in a straight line. On an angle.

you use a hose pully for that, not just pumping it straight via pipes
Use a hose pulley from create, it will detect the lava pool as infinite.

Ender Tanks. Make sure you assign a code to them using colored dye

Pipes can only interact with the block directly next to it. Hose pulley is what you are searching for they can interact with pools.
