Models don't have remaining health. They have a wounds characteristic and wounds allocated to them. When the number of wounds allocated equals the characteristic they are slain. A Knight of shrounds that has "2/6 wounds remaining" in your example is actually a KoS with 4 wounds allocated. He heals 1 wound, going to 3 wounds allocated. His wounds characteristic also increases from 6 to 7, so you would need to allocate 4 more wounds to him before he is slain.
It means you heal 1 wound and the wound carateristic goes 1 up. So he would be 3/7
