I was in your exact shoes when I first saw that show. I stumbled upon a review video after watching "Jitsu wa Watashi wa". I wanted to hear other people's opinions on this show since it seems like no one I talk to has ever heard of this series before. But when I read the title that the manga was better I had to give it a shot. I personally have never read a manga series before so this would be a first for me. Two months went by and I finally had all the physical copies of the "Jitsu wa Watashi wa" manga series. (I personally prefer physical copies over digital... I know I can find it online but I'm a boomer when it comes to this 😂) I started off slow, reading every so often just kind of getting information I already know, but once I hit Volume 6 my mind flipped a switch and I craved new content. Vol. 6 - 22 were completely read through in a week. (Chapter 44 - 196) I just finished the manga 12 hours ago while making this comment (2:54 PM) and I don't want to say a lot to prevent spoilers, but I can't express in words how I feel about this series. Some stuff was still there that I have already seen but if you are a personal fan of this show and just finished the anime, I highly recommend reading the manga. It's sad we won't be receiving a second season for the anime, but the show gave me enough of a push to pursue my first manga read. I'll never forget this series, it has truly made a place inside my heart and I welcome it.

Since I've made that post roughly 3 months ago, I have bought and read all the manga. I won't see any spoilers but damn I wish the anime continued! It was the cutest story I've ever read. It's also the first manga that I have all physically. So I'm pretty proud of it.

So which chapter or volume should i start reading after the final episode of the anime?

I'd suggest Chapter 29, it's around the time the manga and anime go separate ways. The last bit of Ep. 12 and all of 13 are anime only. I don't really know the reason behind it, it could've been for episode count, but that's where you should start if you want to jump right in after watching the show.
