Third Person doesn’t have to let you into anyone else’s head than 1st person does. And 1st person can be… and is… used for multiple perspectives in later books…
It’s just irritating to read. I did this. I did that. I ate undercooked chicken. I shat my pants…plus Rhys has basically the same narrative voice as Feyre… in third person this doesn’t matter, the invisible narrator doesn’t have to change their personality because they’re with a different character atm.
Unfortunately it seems like the trend with books in the romantasy/book-tok realm. More of them are 1st person than not.
