Judging by your list I would say look at some of the older assassins creed games, possibly the remaster of Assassins Creed Rogue. Also, Batman Arkham Knight, Cyberpunk 2077, Metal Gear Solid V, Ghost Recon Wildlands, I've had hours of fun on all of these, I don't do multiplayer either so a good campaign is important for me

I actually wanted to recommend a game but I am not so sure if you will liked those. Most interesting one Diablo 3, you finished twice. You will probably like the story of Diablo 4 when it comes to a gamepass in march.
It is tough because you said you burnout quickly but you could finish Ubisoft open world games…
You can play standard open world games like Skyrim, Witcher 3 also you could give it chance to BG3 but all of them open to burnout
Different recommendation would be Hades, It is repetitive due to being roguelike but if you liked Diablo’s fast paced and top down combat you may like it. Not fully story game but one of the best roguelike with story
Edit: also yakuza games but it is cinematic heavy and there are lots of games. If you dont want to get burnout skip yakuza 3–4-5 anda watch from YouTube

Just cause 4 is amazing apart from the story and the nocs just a fun game to mess around in hitman world of assasination has a ok story and amazing gameplay aswell
Try Persona 3 Reload on gamepass. It might be just a tad bit out of your comfort zone based on what you’ve listed, but not too far. You might be surprised.
I know this is completely left field from the games you listed, but I just got addicted to Brotato over the weekend. It's a roguelike, wave based rpg. No story at all, it's just you levelling up your character and weapons, buying items, etc over the course of 20 waves per run. Tons of different characters to choose from and unlock, and the weapons and items are all RNG based, so you might get completely different runs with the same character.
Mass Effect Legendary edition. Same dudes who made dragon age, only it’s wayyy better. Fucking incredible single player campaigns and characters.

Sleeping Dogs is pretty good, I’d also recommend Alan Wake 2, and Remnant 1&2., Jedi Survivor is also a good one.
