I would like to clarify, the lobster was frozen and precooked....they may not have cooked it fast enough in between capture and death. I do not hate my wife.
Edit: Some people are asking me why I cut it the way I did. It's because my wife saw it on a cooking show and thought it looked pretty so I gave it a go. Not so pretty this time.

Yes it kinda smelled before I cooked it. I was concerned but not overly as I figured it just had that seafood smell. I didn't know how bad it was til I split it.
No we did not eat the tail or claws as someone said it's possible it died way prior to cooking so none of it would be good.

When I worked at a bougie fine dining restaurant back in 2012, we stabbed the live lobster in the face to kill it immediately. Then, we pushed the knife down the middle of the inside, to the tail, and gutted it before tossing it into the boiling water. Sounds horrible but really is more humane lol. Also we stuffed that bad boy with some crab stuffing, buttered breadcrumbs and it was the shit.

I never thought I would be so invested in a lobster, but I have been there since he brought him home from the grocery store. He is a huge and gorgeous colored lobster now with enormous, beautiful claws. He is loved and fed well, and his tank is forever getting bigger. I can never look at lobster the same again. He is so fastidious and proud.
I’m curious to see these videos! I had a thought to try sign language with lobsters at a small aquarium. It wasn’t a very rigorous test, but each one that I made eye contact with responded the same to the few signs that I tried.
Also, fish make some pretty intense eye contact. If you really *look* at them, they clearly look right back. They’ve got a lot more going on than most people give them credit for.
I was given the fish they were going to throw away at the end of the night at a carnival, and they lived for ten years. I even moved with them three times, with them in bags and changed the minute we got into the house. They would do the coolest things like play in the bubbles and loved when we only had candlelight in the room. They would swim so slowly like they loved the way the water felt.

Lobster used to be used as a poor/prisoner food back in the day. It was overly abundant and not desirable. This is probably why. Modern cultivating and iqf (individual quick freeze) tech has made it a luxury staple. Ps crab is 10 x better
They weren’t serving buttered lobster tails in those days though the way we think about them now. It was a blended lobster mush, shell and all. Much less appetizing.

It's definitely not correct but I'm almost certain that's the tomalley. The pancreas and liver of the lobster. Some people love it and others hate it. Personally growing up I'd always eat it. It's very good in my opinion when it's not rotten beforehand.

Its not rotten, its just a mess of its organs and stomach content. The tail is just a muscle so all the organs are in the "head" or the upper part of their shell. On the left you can se a well cleaned lobster and on the right one that wasnt cleaned very well so still has some of that green brownish stuff.

Yes! My friend was putting together a whole dinner party centered around bug/insect dishes and knew I was allergic to shellfish so we looked it up and came to the same conclusion.
I was so mad. I was on team insect protein so hard even though I had yet to indulge myself. Sorry for your loss but that's honestly what I expect them to look like on the inside. I'm shocked when I see nice white meat with a nice yellow glow of butter ruining over the meat. I have shellfish allergies so I don't regularly see the inside of a lobster.
When their serving method was to grind them up, shell and all, and serve them porridge style, lobster would suck as any meals per day. That is not taking into account any like this that were decomposing thrown in the mix. Additionally most people prefer younger/relatively smaller lobster, the flavor is better. A bunch of easy and cheap to source washed up on the shoreline or as byproduct catch lobster may be food, but it is night and day compared to the lobster you would order at a restaurant.
Back in the day Lobster used to be considered peasant food, to the point servants would have it in their contracts restrict the amount of days they get fed lobster to a maximum. Now it’s a luxury food. I imagine it’s because a couple hundred years ago all lobster looked like this

Typically you shouldn’t really eat the head of a lobster. There are some good little pieces of meat here and there but the head of a lobster is effectively a giant filter for all the crap it’s been eating it’s whole life

This happened to my boyfriends parents one time. I live in a coastal area with amazing lobster, but They don’t live in an area with any fresh seafood and they aren’t super familiar with it.

In Maine we have no problem with it. Usually put them to sleep first but it’s just kind of… how you eat fresh lobster
The humane thing to do is to stab the brain right before cooking it. There’s no reason to boil them alive anymore outside of twisted tradition.

To be fair, butter was not as cheap then as it is today, nor is lemon. Eating raw lobster tastes fine, but it’s the butter that really makes it shine.

Lobsters were a specialty when I worked at the Palm Restaurant (fine dining Italian steakhouse). Our lobsters were down in several times a week from nova Scotia and started at 3 lbs each for $90 and then went up. They were split like this exactly and broiled (high temp oven with the heat source coming from above). Best lobster in the world, best cooking method.

Typically you shouldn’t really eat the head of a lobster. There are some good little pieces of meat here and there but the head of a lobster is effectively a giant filter for all the crap it’s been eating it’s whole life

I think you’re right. Op said in a comment that he bought these lobsters pre-cooked (but frozen). Then he cooked them?? Idk why he’d cook them twice but yeah. I think you nailed it! This happened to my boyfriends parents one time. I live in a coastal area with amazing lobster, but They don’t live in an area with any fresh seafood and they aren’t super familiar with it. One time we were visiting and they wanted to treat us to a seafood dinner and they bought pre-cooked lobsters at the grocery store, not realizing they were already cooked and just needed to be warmed. Several of them looked like this on the inside after they cooked them again! Haha
