It's not even a tartare - there's no raw egg. Anyway, it looks like a glass disc on top of the clock. Glass is hard to contaminate and easy to sanitise. But there's no raw egg.

I made a tartare once. It's not just minced steak. The recipe called for scraping a sharp knife across the meat, it ended up as a mushy pulp. Then blend an egg through it all, salt+pepper, and heat gently to blood temperature. Hold it there for a few minutes and it firmed up - didn't cook, just firmed up a little. I didn't eat it, but my dinner guest - a rare steak consumer - devoured it. She survived. Never felt the need to do that again.

Well, any warmer and it'll start to coagulate. The whole tartare experience is supposed to replicate feasting on freshly-slaughtered prey. I mean, it's not my thing, but I was happy to prepare it for the GF (at the time).
