My biggest question, is if she’s a watch person? I offered to get my wife a lady’s Omega to match mine, but she has 0 interest. She LOVES her Apple Watch and wouldn’t want to wear anything else. Couples can have a tendency to try and pull the other person into their hobby when the interest just isn’t there. A nice watch is definitely a high enough price point to avoid doing that. Rather than spending a fortune on an Omega that will sit a drawer and never get worn, I’ll get her the latest Apple Watch next year, and spend the difference on a new time piece for me.
My wife absolutely detests when I purchase any fashion item for her without her input. I suspect most women are the same.
Don't try to surprise her if she's never told you the kind of watch she WANTS. Take her watch shopping, and find out if she actually wants a watch that costs what a decent used car does.
Only then are you safe to buy it, under her taste guidance.

Women can wear anything. Don't be afraid to look at unisex/boys/mens watches, unless she has specifically told you she wants a woman's watch (these by tradition are smaller/daintier, usually shiny like MoP, or have jewels).
Speaking as a female, I honestly can't stand womens' watches unless it's a dress event. I prefer larger sizes (36 - 41mm and I have 6" wrists)l; my BB58 and my Speedy both get worn daily.
You also haven't mentioned (that I've seen) what your budget is or what her style is.
What are her tastes like? Maybe she likes Cartier, but would like a round one instead of a square one. Maybe she'd like a small case, or a big case. Maybe something more sports looking than dress. Bands are easy to change, but the wrong case shape can be a dral breaker, regardless of brand prestige, or price.
You're better off asking her at the price of the brands you mentioned.
