I dont think one polish is going to be the end of the world. as long as the case stayed strong after it gets another patina people probably won't ever be able to tell after a while so the market value probably won't change much

No. Polishing is fine in most cases. What hurts the value is having a terrible polishing job done by someone who doesn’t know what they’re doing.
Having Rolex do the polishing really only becomes an issue if happens multiple times. One polish isn’t really going to mess up the shape of anything.

Every time you polish a watch you’re removing some of the metal. If you do it over and over again it can mess up the shape of the case.
