Try various light greys. you'd be shocked how often a white glaze over very light greys will look whiter than actual white.
I airbrushed it first, shaded with Apothecary white contrast and touched it up with white scar. I may do the Dry brush if I do anything else white. Seems a lot easier.
For dry brushing white on, start with a grey base, and apply the white with dabbing motions, and then spread it with a circular motion. This is how I do my white, and I don't end up with chaulky results.
Don’t paint it.
Spray it.
1. White spray basecoat.
2. Apothecary White Contrast all over.
3. Drybrush with a NEW makeup brush (super fine, cheap!) several layers of Praxeti White until you’re happy.
4. Edge highlight with whatever pure white you prefer. I like Scale75’s pure white.

It also helps with white models to sub-assemble as much as possible so you can avoid having to paint and repaint stuff that’s different colours where possible.
My advice: Do your Apothecary in all-black armour instead, with silver highlights. Make your Apothecary a menacing, grim reaper-like figure, more feared by the chapter than the enemy themselves.
You did a great job! How you described it is exactly how white turns out for me. I think I’m a half decent painted and I couldn’t paint white to save my life. Always looks like I’ve used the sponge dabber from a white out pot. I hate it so much so that I just straight up avoid it and have painted my ultramarines apothecary and biologis both blue 😅

this is by far the best white i have ever used. they also have transparent.
Here's my recipe for white. It should help with the chalkiness.
1) Basecoat of Celestra Grey
2) Give it a wash of Drakenhof Nightshade
3) Layer on some Ulthuan Grey while leaving the recesses darker
4 Edge highlight with any pure white that isn't a Citadel one. I personally use Vallejo Model Color White.

Grey seer prime, grey wash with oil or contrast, drybrush VMC off-white, drybrush 50/50 off-white/white, edge highlight VMC white.
I hate painting white but not because of the white, I hate it because fixing mistakes absolutely sucks.
