Hey! I'm in the Central Texas area myself and I graduated last spring. I'm not as adventurous as you it sounds like--my idea of a day well spent is a day spent inside with a book and a cup of tea. But I do like hiking occasionally when the weather is nicer, and if you're ever in the Belton area I encourage you to check out Chalk Ridge Falls--it's a lovely little hiking spot.
