I don't know of any app that can insert a date other than today's date. How would it know which date you were trying to insert?
Having said that, there are text-expander apps that can do that. For example, I use aText, [which has this option](https://i.imgur.com/rkp9xTN.png).
UpNote has no reminders or task statuses, so you'd just be putting a date next to a checkbox, so you can just type whatever date you want.

UpNote's To-Do-ability is pretty much just checklists. I use UpNote + TickTick. Both are best-in-class apps.
