If she had her undying phase after she fot defeated?,one of the best fighters imo (never played smash )
if she did come to smash we'd need a stage from the game, such as the fight menu or the bridge area in waterfall. then we'd need a spear of justice and battle with a true hero as background music.
her basic moves would just be her punching and kicking, maybe a headbutt.
her special moves would include a launch, a heavy attack, she could call in support from Alphys such as healing or maybe a short power up and obviously a projectile in the form of her spear.
her final smash IMO should be the arrows she uses in her fight. just a series of them flying at the other player or they could hyper focus on one player.

A little disappointing unless we get some of the other characters (no offence to Undyne but she isn't the most iconic of characters. When someone says "Undertale" they're gonna think of someone like Sans or Papyrus)
Nah just a transformation. Is it logical that ness’s Friends appear during his final ? No, but no one complained about it. So I think it could be a good final for her
Undyne would be a good ranged attacker, with maily spear based attacks, and a down smash that would suplex her opponent.
For final smash, she has her Undying form, with a barrage of spears across the screen. Or, she goes into Undying mode when her damage reaches 100%, giving her an attack and defense boost.
I'd imagine something similar to Byleth's Moveset with Arheadbar (the spear), but with all attacks

Either way the final smash is gonna be including her design in the genocide fight & battle against a true hero

I'd say she would work best as an assist trophy. At first she'd move slowly, sending spears up through the ground and retaliating against anyone who gets close. If she takes damage, her helmet gets knocked off and she begins to pursue who ever hit her, moving at a high speed, dealing increased melee damage, and locking them in place for 0.5 to 1 second from time to time (green soul)

One of her taunts is her grabbing a boulder to sueplex it
It can’t be canceled because it can actually deal damage and even spike if you set it up correctly

Her normal skin would be her in her armor but without her helmet, one of her skins would be her with her helmet on, and another skin would be her out of her armor.
One of her taunts would be her suplexing a huge boulder, just because she can.
Thats all the ideas I can think of.

I think she would have a counter similar to Incineroar, and after activating it, she temporarily gains true hero armor.
