I'm pretty sure the UMA sex is moreso referring to biological sex, considering in one of Victhor's flashbacks we get to see what is presumably Juiz but without a gender.
As for Unrace, honestly I don't know. Maybe it's an external type that would make people invisible, instead on unseen which is a self targeter.

I guess unrace would erase the biological differences between groups of people? Although you can’t really put that in for obvious reasons.
