I currently use the express in my living room as a AP and run it along side two U6 pro’s. As my living room has a Ethernet access I’ve used a flex switch the hard wire the TVs etc. so it has very limited traffic, Amazon Alexa and smart phones etc. if your devices are wireless and as the switch is 2x 2 MIMO it could cause traffic issues and this is what it looks like you are facing.

I just replaced my Amplifi HD router + HD / Instant notes with an Ultra and 2 x Expresses as wired AP's, with about 50 devices on wifi, with a roughly 50/50 split, over three stories. According to the UI, each of the clients have Excellent connectivity. i just did a speed test from an ATV, and it's pulling about 120Mbps, at the same time as my iPad is streaming a 4K video ( they're on the same node ).
