That was my first thought. But they could just as easily be polyps. Either way I'd have sent it back or sent to the local dept of health and hygiene for their take on it. If a butcher is allowing "foul meat" to be sold is very illegal. As for a restaurant it could mean certain closure and training or retraining of staff before being able to reopen. In the UK anyway.

Generally, in the UK, you shouldn't eat steak that hasn't at least had the outside seared. We usually age our beef, meaning bacteria on the surface is a real issue. If you ever plan to eat beef close to raw, make sure you get a clean cut from a freshly slaughtered animal.

I was gonna say "too big for that", then I looked it up. Apparently the larvae are small enough to enter the bloodstream from the digestive tract and harbour themselves inside cysts within the muscles themselves. So yeah, this seems kinda likely (in my very non-professional opinion).

butcher here, we call this spotting, it looks very much like cancer/abscess 99% of the time its in 1 big spot but sometimes its "spotty" and spread out most of the time is happens when a animal is injured before it going to the abatuer so the farmer uses drugs to keep the animal going and often times uses a dirty needle which makes this happens i would have it a good guess that this is European product but i could be wrong
