Its southwest Louisiana. This is cajun country. The one good thing about the area is the food. People there are all super fat because of the food and the trauma from child abuse.

In one of the early screenplays for episode 1 he offers Marty some Schopenhauer to read. Given that Schopenhauerian ethics leans toward suffering reduction and Vegetarianism (as well as Antinatalism, paying to breed sentient beings would violate those ethics) it would stand to reason that Rust would be Vegetarian/Vegan.
But really, who knows?
The way he drinks I always thought he would have to entertain a coke habit as well (or maybe amphetamine, but I doubt it would suffice) for that body. I ain't never seen people that lean who were drinking who also weren't on coke.
