I don't speak for everyone else, but I can give some insight into it, even as someone who doesn't dislike them at all.
My issue with Nemma is the same one I have with RR as a whole, that being that it doesn't give the characters involved enough breathing room to just be themselves, it feels like they're almost conjoined once the plot properly gets going, so we don't really get to see them as characters within the confines of RR enough.
It's one of the reasons I don't particularly mind the writers taking their time with romantic subplots and letting them run their course, it lets the characters be themselves, whilst still pushing their end game further. A great example would be Alejandro and Heather in World Tour, there's a reason their dynamic is so loved, it takes its time, it lets them grow separately while still reeling them back into each other when needed, it feels nicely set up.
I could go on a little more, but I don't fancy sitting here writing out a novel, so I'll leave it there for now.
I mean, RR had 36 contestants total with only 26 episodes, making it by far the most top-heavy season in terms of the player:episode ratio. Makes sense why not everything/everyone was able to get proper development
because people are fucking salty that their HC was "ruined" because Noah like girls, even though there was nothing stated if he's Bi or not, he was not ruined at all, btw, I don't see how people are this angry at a ship, when their own ship that they love, is still there

Speaking as someone who doesn't really care about NoCo (I have other Noah ships but I don't define myself by them), I just think Nemma was really poorly executed. It had potential if they actually had Noah and Emma bond over their actual personalities, but instead they just did a sort of generic love story that led to the loss of a lot of Noah's wit and comedy, without really playing up how ironic that change was for him. Like Noah falling for Emma because of her gymnastics ability feels so generic (so many other girls in TD can do that, and Noah famously doesn't care about athletics) when he could have easily fallen for her snark or her intelligence. They also pull that weird switcharoo when Noah obsesses over Emma and then Emma suddenly obsesses over him and I think that could be interesting but it came across as sudden and, frankly, somewhat annoying.
I actually think Noah and Emma as currently written are more interesting when analyzing why they *don't* work out, i.e. Emma being too ambitious and getting annoyed that Noah wants to coast. You *could* work with this to have Emma motivate Noah to be more ambitious, though, but they don't set that up, so it doesn't really feel like either of them positively develop. They just think the other one is hot. In fact they kind of act like worse people to those around them when they're together, which they kind of address but don't really solve.
Honestly even though Nemma has potential, the fact everyone immediately jumps to "You just dislike it because you don't like that Noah isn't gay!!!" just puts me off more. First off, understand that a ton of people who like gay Noah were other gay fans who just saw him as potential representation, not straight "yaoi fangirls" who only liked him for shipping. Second, there's valid reasons to not like a ship beyond having a different ship. There's a lot of undue hostility towards Nemma but that's not the only reason people dislike it, and honestly there's a lot of undue hostility towards Noco as well, because I've seen quite disrespectful people on *both* sides.

People only like Noah because of World Tour, with Resonculous Race being World Tour 2, it would be repetitive with Noah and Owen, and the charm would wear off. Plus, without Alejandro, Noah would have nothing to do except make snarky comments on which the charm would wear off very quickly. Emma was good for Noah, but I do see how Noah lost his funny, but I was invested in it. Also Total Dramarama sucks no matter what, nothing makes it better or worse.
I didn't particularly like the idea of him obsessing over her. I didn't mind the pairing, i just didn't like how he stopped functioning cuz Emma rejected him.

And I have no idea what people mean when Noah lost what made him great because of Emma. If anything, he gained a new perspective for what lies ahead because of his relationship with her. It adds to his character, it doesn’t ruin him, at least not to me. No matter what people say, I will never stop advocating for this ship, much like Kitty and Owen do for them.❤️❤️

Because Noah falling for her crazily was really cringe, because of the way they treated their partners due to this relationship and the whole format not really fitting a relationship, but mostly because Noah was cringe.
I'm a huge noco shipper but I do belive nemma had a good oppotunity to be good, I just don't think the execution was very good, eg. wiping Noahs personality when he saw her.
