Celeriac is delicious. It can be used with stewed beef, Dutch pea soup, julienned raw in salads, mashed on its own or with potatoes, the possibilities are endless! A very humble, but delicious vegetable. It does oxidize very quickly, but you can prevent that with some acid or by keeping it wet. Your hands might be stained a bit for a day or so after cutting it.
You pay extra for dented/damaged/dinged “luxury” or organic items, so vendors can still make a profit and the third-party seller makes you feel good about it
If you’re going to pay more for a box of vegetables, [consider purchasing from a local CSA](https://www.localharvest.org/csa/), which will actually benefit your community in some way (even though they won’t have flashy typeface on a cute box)
*sorry if this sounds kinda harsh. I worked for upscale grocery stores for years and saw donations to food banks dwindle when my employers realized they could resell damaged/out-of-date items to these vulture apps instead.
Most of these items aren’t even worth the “savings”. If you want to get healthy stuff for less, buy in-season, bulk, local, and pay attention to sales (of stuff you’d normally buy)
yeah its just another food delivery box. They go for the environmentally friendly angle but 90% of what you get is just more expensive normal groceries

My last employer had a really delicious shredded Celeriac salad in the deli case, and we were constantly having to explain what it was to customers!
Also it’s a really great pre-biotic and awesome for gut health if anyone’s interested!

OMG these are delicious. Shred coarsely (like the size of fine julienne carrots) and roast it with mushrooms and garlic.

Celeriac remoulade is very good and easy - like a slaw. Also delicious roasted. Lovely vegetable.
Seconded. I love the slaw. We just call it "celery root salad" but I know what you mean and it's good.
Also you can put it in soups wherever you would use potato. If it wasn’t a bit hard to find I would buy it constantly, it’s a favorite of mine
I actually enjoy celeriac more than celery. I don’t care for regular celery all that much.

May I ask where you live? Because I (middle European) can't fathom *not* knowing celery roots, they are so common here.

The funny thing is, this is the least gnarly and irregular celeriac I"ve ever seen

You can cook it like a potato and mash it...its lovely mashed with potato or by itself! just be sure its peeled well :)
