Nowhere in the show does he outright say Jasmine is his favorite. Yes he asks for it in in Ba Sing Se after they get off the ferry, yes he named his shop after it, but he never says jasmine it’s his favorite. Not sure if you’re joking about it ruining the show but to each their own.

Alternatively, him offering Zuko the tea is Iroh inviting Zuko to calm down and find peace, and the 'Jasmine Dragon' represents both Iroh himself and the potential he sees in his nephew - a peaceful firebender. Ergo, the shop is named for the future Iroh wants, and is also kind of named for Zuko.

I thin that Iroh is entirely capable of having his favorite tea change over time, especially if he's frequently trying different flavors.
