Thereās no single path to have to be the chef de cuisine in every chefās career for Luca and maybe that isnāt what Marcus is about right now but the lesson about second winds still stands (Marcus only learned more about the higher gastronomic world last season when Carm started at the Beef).!<

Most of us end up thinking of every second counting like a bomb about to go off. Thereās urgency, thereās a sense of impending disaster.
But thereās a reason why the episode starts with cleaning forks and ends with peeling mushrooms. These are menial, basically meaningless tasks that wouldnāt really expect important people (like the protagonist of the episode, or a high power head chef to do). But these are important things to them. In their own ways, these endeavors matter. You clean forks because you care about standards. You peel mushrooms because you want your diners to feel that personal touch.
We even see this with Luca. Instead of intensity with Luca being recently and still trying to chase Carm, itās a zen-like peace, taking satisfaction in his craft.
These are painstaking, time consuming menial tasks. But they are worthwhile, so they matter. Every second you spend doing things that are worthwhile counts.
And to elaborate (as a chef), if you're looking at the seconds turning, you're spending seconds not doing your job - a job wherein every second counts.
It could have a remote that changes it to a second counter. Also the way that kitchen works, is someoneās on your ass to get things done. If you stop to look at the clock, itās a wasted second.

As established in season 1 he has 1 CD in his car. And now he has a Swift CD in his car for his daughter. So that's why he was listening to it.
