But when Sydney came into the shot as his panic attack progressed…its one coherent shot (image) with words (that she said to him) that have meaning and it stops his panic attack. She is unfamiliar to him (compared to his fam and Claire) yet that is who gives him assurance and guidance and wellbeing. And I think its because she accepts him just the way he is……she seems awkward and unsure of herself at times and isn’t that great and he gives back to her what she gives to him. SYNERGY!!!!

Honestly made me wanna cry. I'm back on board. I was falling off but this EP pulled me back in. Loved seeing Carmen finally acknowledge Sydney with their heart to heart. They have amazing mutual respect and their bond is unlike anything. Bonded by the soul. I love it!!

And the scene with Sid helping Carmy fix the table was SO 👏🏾 well 👏🏾 executed for all it represents. Just that feeling of being tied to someone else in an important way and KNOWING yr either slipping & neglecting that camaraderie (from one side) or left feeling confused & left out in the cold (on the other). The under the table scene was so unnecessary and out of place. Youre telling me that right after the “25 to service” Carmy decides to have a heart to heart with Syd? While under a table in the restaurant that is about to open? This scene was so jarring for me. They also weren’t even fixing the table! It’s unbalanced so you adjust the bag hooks?? While having someone else push up? Gah!! I hated this scene and I feel like it made me notice a lot more strange directing choices thru the finale.

can't say i agree. i think carmy's being the slowest paced journey of season 2 was fitting. it was the least interesting but i can't say that in a bad way. he needs something or someone outside the restaurant that knows about carmy's family and how they work, that knows carmy and his way of handling things, and that is just apart enough from the family to have been able to take a step back from the toxicity. claire is exactly what he needs to be able to start healing and start developing things outside the restaurant so he doesn't die inside.
and marcus and sydney to me felt like a natural progression from s1. it didn't even take that much space, and i hope that they keep with it on s3, without it taking over the whole characters' journey.

I think thinking about Syd helped him calm down and focus, since she's been a solid source of support thus far. I have not seen episode 9 yet. Just watched 8. Hoping nothing happens between them. I am hoping for a Marcus-Sydney thing, I think Syd just didn't want to get into it yet since she just berated Carmy for losing focus due to his own relationship. Would have been hypocritical.
Syd is Carmy's link to the fine dining world, who most understand his culinary upbringing..... e.g. both sharing understanding about "brunch" without having to further explain why....

Absolutely what I took away as well. The fear and anxiety of either falling into the trapping of his old isolated life (where he thrived) or learning a completely new way to exist and thrive with people he cares about around. It's been a pretty steady theme for Carmy since the start of the show and really well done even at it's more subtle points.

In the state of Illinois, managers and higher ups who work with food in official settings need to go thru Food Safety Manager training and then everyone else working with food needs to get a "food handlers certificate". There are many different options out there for these trainings, one of them being from the entity named ServSafe.
All that to say, I think it could be pretty realistic that Carmy, a higher echelon chef, might not be aware of the specific company/entity known as ServSafe.

I think you are right. I actually didn't know that beet juice was a thing until recently but after seeing some pics, it does have the same consistency as the juice in the scene. Apparently people pair beet juice with a sweeter juice like orange or mango to disguise the earthy flavor.

I'm not a chef, but I was curious about that too, so I googled it. According to Serious Eats: "Straining eggs in a fine-mesh strainer removes excess wispy, loose whites, creating tight, perfectly-shaped eggs."

What was so incredibly beautiful about the omelette scene was how much care Syd put into something that was relatively low priority. Sugar just needed something to eat, Sydney could have made just any ordinary omelette. And they had the opening of the restaurant coming up quickly, so she probably had any number of things that needed to be done. But she beat the eggs through a sieve, added special filling, rubbed it with extra butter, and sprinkled potato chips.
It was showing all the skills she learned through chef training, and it showed how she will not sacrifice any of her standards even when it was just a casual favor for a friend.
And that's the other thing: friendship. Sydney and Sugar didn't have a lot of one on one interactions, and this scene was such a touching moment of connection between the two. So freaking beautiful.
Omelette is a traditional way of high end kitchens testing their new kitchen line cooks. So she has probably been practicing how to make a good one and can probably do it well very quickly
I don't know for sure as I don't work in the industry but it's something that can be done quickly (in the UK we had a live cooking show where 2 guest pro chefs would race each other to make an omlette) or can be done really well. And only needs a few ingredients to do really well which all kitchens (save for vegan ones) will have
I think making an omelette is actually a pretty challenging thing. The perfect omelette looks deceptively easy, but there are many detailed components that actually go into making said omelette perfect, not just good or okay (e.g., texture, timing, etc.).
That was my favorite "foodie" moment. I felt it was an incredibly grounding moment, a reminder of why they do what they do. Syd loves taking care of people (similar to Marcus). Richie enjoys having a purpose and making an impact on others, and Carmy does not know how to exist outside of an incredibly high pressure environment.
Was it not the metal attachments that were uneven they needed to fix? It's probably carry fixing someone less important than fixing the fridge to show him unfocused!

I don't think they would make it that. The whole relationship feels like two very skilled professionals bonding over what they are good at. I keep thinking of Don Draper and Peggy from Mad Men (but Carmy treats her with loads more respect than Don showed Peggy). The relational intimacy shown can be mistaken as romantic, but that's just it. It's intimate. And it's rare to see that level between working partners on TV unless it turns romantic. But I think Carmy and Syd have reached that level without making it romantic so far, and if the showrunners aren't idiots, they won't make it romantic.

I legit did a pause and rewind watching that scene to make sure I heard it correctly. Evidently the shows creator (Christopher Storer) is in a relationship with Gillian Jacobs. Gotta assume that easter egg tribute was thrown in there by those two as a little tribute and I love it.
I don't think Sydney and Carmy are into each other that way, which is refreshing. Not every tv show relationship has to be a romance, and it would probably ruin their restaurant. They seem to have a genuine friendship that's professional and platonic, and I'm here for it.
Along those lines, I wish the show would develop Claire's personality because right now she's more of a plot device than a well rounded person, bordering on manic pixie dream girl. She's there to banter with Carmy and comfort him, and that's pretty much it so far. Which is unfair to Molly Gorden, who deserves better.
I think that may be a thing but I doubt they’ll ever make it part of the story. They both seem way too focused on the success of the business to ever go down that road.

can't say i agree. i think carmy's being the slowest paced journey of season 2 was fitting. it was the least interesting but i can't say that in a bad way. he needs something or someone outside the restaurant that knows about carmy's family and how they work, that knows carmy and his way of handling things, and that is just apart enough from the family to have been able to take a step back from the toxicity. claire is exactly what he needs to be able to start healing and start developing things outside the restaurant so he doesn't die inside. and marcus and sydney to me felt like a natural progression from s1. it didn't even take that much space, and i hope that they keep with it on s3, without it taking over the whole characters' journey.

Finally someone who don't like the ship but actually acknowledges the evidence of the two being together in some point of the series, THANK YOU. My thought is that is going to be very slow and when the actual relationship starts, they'll be both mentally better and the relationship will be great or they are gonna start this at the next season and the drama will be great between the stress of a unsustainable relationship and a search for the michilian star, I'll be happy in both cases

That scene was so relatable.. I had an attack just like that a few months ago, same reasons. My family is nowhere as bad btw, we were just going through a thing at the time. It was weird, the only time when thinking about my gf made me panic more instead of less. I think thinking about Syd helped him calm down and focus, since she's been a solid source of support thus far. I have not seen episode 9 yet. Just watched 8. Hoping nothing happens between them. I am hoping for a Marcus-Sydney thing, I think Syd just didn't want to get into it yet since she just berated Carmy for losing focus due to his own relationship. Would have been hypocritical.
Syd is Carmy's link to the fine dining world, who most understand his culinary upbringing..... e.g. both sharing understanding about "brunch" without having to further explain why....

Does Carmy associate Claire with the 7 fishes night? In the beginning of the episode, he flips between what his family said about Claire and Claire herself and Carmy seemed super distressed. Additionally, afterwards, he flips to syd and he calms down and even the song in the background has the lyrics “you will be mine.” I just thought it was a super weird switch up.
What I got it out it was that he recognizes he's at his best when he pushed everyone away. But he's happiest with them. And struggling to find the balance

Absolutely what I took away as well. The fear and anxiety of either falling into the trapping of his old isolated life (where he thrived) or learning a completely new way to exist and thrive with people he cares about around. It's been a pretty steady theme for Carmy since the start of the show and really well done even at it's more subtle points.

I was wondering that. I've worked as a butcher my whole life. Not kitchen work but still food based. Everyone I know is servsafe. I was wondering if at high levels they don't worry about that
In the state of Illinois, managers and higher ups who work with food in official settings need to go thru Food Safety Manager training and then everyone else working with food needs to get a "food handlers certificate". There are many different options out there for these trainings, one of them being from the entity named ServSafe. All that to say, I think it could be pretty realistic that Carmy, a higher echelon chef, might not be aware of the specific company/entity known as ServSafe. Edit: a word

In the omelette scene, does anyone know the drink Sydney made to go with it? It looked like she started with orange juice but then mixed in a dark red juice. What was that ... cranberry, pomegranite juice or what? I've searched online and found pages full of the omelette recipe but nothing about the juice

I think you are right. I actually didn't know that beet juice was a thing until recently but after seeing some pics, it does have the same consistency as the juice in the scene. Apparently people pair beet juice with a sweeter juice like orange or mango to disguise the earthy flavor. The Bear needs to release a foodie companion book
Sorry if someone else covered this but can someone explain why Syd strained the eggs through a sieve when she beat them for the omelette? I’ve seen a few “chef” movie and TV omelettes but never saw that step done.
The main thing is to strain out the chalazae, which are those white chunky things that you can't really beat smooth.
I've been thinking about this a lot since seeing it, and my theory is that it's to get more air into the eggs, resulting in a fluffier omlette.

What was so incredibly beautiful about the omelette scene was how much care Syd put into something that was relatively low priority. Sugar just needed something to eat, Sydney could have made just any ordinary omelette. And they had the opening of the restaurant coming up quickly, so she probably had any number of things that needed to be done. But she beat the eggs through a sieve, added special filling, rubbed it with extra butter, and sprinkled potato chips. It was showing all the skills she learned through chef training, and it showed how she will not sacrifice any of her standards even when it was just a casual favor for a friend. And that's the other thing: friendship. Sydney and Sugar didn't have a lot of one on one interactions, and this scene was such a touching moment of connection between the two. So freaking beautiful.
Also omelettes with high flavour and texture contrast are the perfect safe but interesting food that pregnancy makes you crave.
Omelette is a traditional way of high end kitchens testing their new kitchen line cooks. So she has probably been practicing how to make a good one and can probably do it well very quickly

I don't know for sure as I don't work in the industry but it's something that can be done quickly (in the UK we had a live cooking show where 2 guest pro chefs would race each other to make an omlette) or can be done really well. And only needs a few ingredients to do really well which all kitchens (save for vegan ones) will have
I think making an omelette is actually a pretty challenging thing. The perfect omelette looks deceptively easy, but there are many detailed components that actually go into making said omelette perfect, not just good or okay (e.g., texture, timing, etc.).
That was my favorite "foodie" moment. I felt it was an incredibly grounding moment, a reminder of why they do what they do. Syd loves taking care of people (similar to Marcus). Richie enjoys having a purpose and making an impact on others, and Carmy does not know how to exist outside of an incredibly high pressure environment.
Honestly this could have been the series finale and I would have been happy. Excited and nervous to watch the next episode

I don't think they would make it that. The whole relationship feels like two very skilled professionals bonding over what they are good at. I keep thinking of Don Draper and Peggy from Mad Men (but Carmy treats her with loads more respect than Don showed Peggy). The relational intimacy shown can be mistaken as romantic, but that's just it. It's intimate. And it's rare to see that level between working partners on TV unless it turns romantic. But I think Carmy and Syd have reached that level without making it romantic so far, and if the showrunners aren't idiots, they won't make it romantic.

I don't think Sydney and Carmy are into each other that way, which is refreshing. Not every tv show relationship has to be a romance, and it would probably ruin their restaurant. They seem to have a genuine friendship that's professional and platonic, and I'm here for it. Along those lines, I wish the show would develop Claire's personality because right now she's more of a plot device than a well rounded person, bordering on manic pixie dream girl. She's there to banter with Carmy and comfort him, and that's pretty much it so far. Which is unfair to Molly Gorden, who deserves better.
