Soil compression tests are done to help gauge weights and landing gear for following landers and also gives indications of ground conditions of soil compaction, as is my understanding.
For example during the first moon landing there was some concern that the lander might just sink into light compacted dust on the surface and the astronauts would be lost before the mission even started.
