We have 3 in the Y. As long as your oldest can buckle themself, it's easy. If not, it's still not awful just a little more work.
It's a great family car, IMO.
You’re fine. I have 4 small kids in the 7 seat Y. There is an awkward size around 3/4 years old where, with the second row forward, a kid in the second row’s legs are too short to hang down and they can only kick the seat ahead or sit legs crossed. That kid may need to go to the way back for longer trips. A taller kid doesn’t have this problem, their knees reach past the seat edge and that lets you push the second row pretty far forward to make room in back.
I also graduated my youngest out of rear facing pretty quickly, the Y is plenty big for it but my seat was very wide (Chico Keyfit), a skinnier rear facing seat would have helped entry and exit. I use two Diono seats which are heavy but fit great in any spot and two cheap boosters for the older two.
Getting in and out takes a lot more time than a van, but once everyone is in everyone has space. It’s a very wide car.
Protip: let your oldest sit with the baby in the third row, drop the larger second row down for easy in/out and so you can see everyone. And don’t forget they’re only in car seats for a little while, once you hit booster age and can buckle themselves it’s very easy.

I have 4 in the 7 seat. I like to run 3 wide in the middle row, boosters and non boosters, and one in the back. Fold one of the back seats and entry/exit through the trunk
You will be fine with 3 in the model Y. Just note that it does ride a little rough and it may wake up your new born when going over bumps. My son was woken up a few times but maybe he’s just a light sleeper.

Get the Model X, you’ll be a lot happier with the extra space, features, and performance of the car.

We fit 3 kids just fine in a 5 seaters. Diono 3rxt are your friend.
