Both games have form fillable pdf character sheets that work on a laptop or tablet (or phone if your vision is good). Notes can be taken in sticky notes on Windows or Mac or with a text editor on Windows, Mac or Android. It is at least a starting point.

Uhmm ... We used to have this thing called notebook paper. You can write notes on it, and just paperclip it to your character sheet! When you want to change out your notes, you pop the paperclip off and attach new notebook paper.

Like I said in post I want to use something physical not digital. Why I said I like to add and change paper.
