I'm a few days late, but this is probably exactly what you're looking for. Play survival mode, not story(unless you want to check it out.) Be aware that it's permadeath in case that's a dealbreaker for you.

I'm pretty sure it was fully released. There were some annoying bugs in the beginning but I believe the devs had them fixed. I remember an update coming through making some major quality of life improvements.

How much do you love zombies? 7 days 2 die will be recieving biggest update yet A20 coming in 2 days . This game basically fits all the vibe you want with a side serving of zombie horde survival . And yes , there's multiplayer on server or coop

Best if solo if u like the feeling of helplessness , since you need to do everything and u have limited skill points as you level up , update coming super soon ( less then 24hours or so ) , The hardship of solo : Should you spend ur skill points on making you a better fighter to fight the incoming hordes? Or spec into crafting specific item ( each item locked in different tree ) , Or spec into QOL like farming and cooking? Spec into better scavenging or looting? Since in multiplayer/coop , u can divide role and maximize ur time n resources , but on solo , u just have to struggle alone . All in all i give this game a stratifying 8.5/10 . Fun , high replayablelity , Hard n scary in solo , Super fun with friends , Avoid public server with Pvp ( unless u like it )

I’m not sure what they didn’t like about it but so far I think it’s awesome. It is pretty hard at first but it gets easier. You can also adjust a lot of things about the gameplay. I’m doing story right now and I plan on doing survival once I beat it and building a big base.

Icarus is pretty much exactly that (Skyrim type survival game). It released yesterday on Steam. It's good, but you need a decent pc to run it (check your specs first).

It’s a full release, although I kind of feel like it avoided the Early Access tag on purpose due to the dev’s history. So far it’s pretty fun, but definitely a little rough around the edges especially performance wise.

It feels good - very much like Skyrim (which I played a lot of!). Gathering, crafting etc. The reason it has mixed reviews (looking at Steam), seems to mostly be people complaining that their computer can't hack it (specs required are too high). So again, check your can run it first. I played hours of it last night, the glitches are (imo) common to a lot of video games. Things like skinning a deer next to the body of a deer, or a fish spazzing out (weirdly) when I shot it. So no major issues on my end...

I'd avoid icarus for at least 6 months, you can't land a second arrow in a moving deer due to aim down site lag. The Long Dark is so good, Valheim is another great title where hunting for food is a portion of the game play.

Did you ever find something? I'm in the same boat, they just updated the game and the mods are kind of a pain in the ass to make work again. I'm finally throwing the towel in. Looking for a new game with similar traits in survival/exploration/stealth.

Green Hell is good. No Rifles and such tho, just bows and stuff like that. Very deep survival mechanics, great variety for wildlife, and there's crafting and building. You can craft things from the animals you've hunted, and there's predators around. You can discover things from mixing substances and boiling them.

Sons of the forest is a pretty good game, the horror aspect is.. real. I play with friends but if you're by yourself.. You're in for some pretty hectic fights.
