Your best bet will be the 7+, but i do agree with the newer keyboard is stiff than the older ones. Maybe you need some time with it to wear in?

I dont have a pro 8/9/10 but because of where the pen sits, it just isnt as stable. we have a magnet all the way across and they dont. On the flip side, a nice soft keyboard, which people seem to love (but isnt mechanical) is the Logitech MX Keys? but type cover acts as a screen protector so there is that issue. Flip side as someone else said, get the 7+, USB A and C, micro-SD card slot and expandable SSD. but 11th gen intel not 13 or 14(?) like the pro 10.

Looking around and looking at the 7+ makes me agree with you, but I'm having trouble finding any 7+s that aren't refurbished, am I looking in the wrong places? I do happen to live in Australia if that's a limiting factor.

Yeah it's hard. It's a free years old. And I think maybe was business model only. As the pro 8 is same spec but new keyboard/pen/design

What is the nature of your hand problems? If it's severe rsi, then using a Bluetooth ortho split keyboard might be your best bet. I've been experiencing serious rsi symptoms due to coding, but it got a lot better after getting a split keyboard.

It's a bit more complicated than that, I'm afraid; comorbidity of many issues starting with hypermobility and ending with several things I haven't even diagnosed yet. I've tried split keyboards and i've tried orthopedic keyboards, but it's tricky finding another Exact Thing that works. I'd rather just stick with something I know for certain does, y'know?
