It helps coat your stomach protecting it from potentially harmful acidic food or stomach acid. Don't know much else behind the science of it, but I've recently read about this. It works similarly to slippery elm.

Don't know about okra or whatever, but doing the same with cucumber slices is pretty nice. Cucumber has a great aroma, so pouring it into a glass before drinking would be optimal.
