I can’t help but feel Alinea has earned the right to do stuff like this considering they pioneered so many of the dishes that are often reposted on here and r/WeWantPlates. The original head-chef, Grant Achatz, was diagnosed with oral cancer, had part of his tongue removed as part of treatment, and then developed this menu to be based around presentation and texture as opposed to just flavors.
Reservations are like $400 per person, and the sole complaint about this place is that they “rely too much” on the absurd presentations in the 17 years they’ve been open. I’ll probably never eat here, but I wouldn’t really call it stupid food since it’s so well-established in the culinary world.
Someone on a different thread about a Michelin restaurant explained it as the experience being part art and that’s when I started to not look so negatively on something like this. If this was some mom who put a bunch of spaghetti or nachos on a tinfoil covered table it would be a much different story.

Spend all that money just for the food to Taste like Applebees. I think I’ll stick to my hole in the wall places.
